 Dinner #1.   Black Rice, Kale, & Aubergine Pilaf  with Ginger Carrot Soup 

           Incredibly flavorful pilaf has lentils, avocado, dried apricots, and pistachios.

Dinner #2.  Lebanese Stuffed Cabbage Rolls with Stuffed Sweet Potato with Dal.

             Filling is cauliflower "rice" while dal is made with butternut and cauliflower.

By the way, the dal was my favorite dish that I created today!  I had my friends from India taste it and they could not believe it had no lentils in it!  Very pleased they loved it!

Chocolate Quinoa Cake

You will NOT believe this has no flour!  Double layer with chocolate buttercream frosting.  My former clients still tell me this is the best chocolate cake they have ever eaten!

Dinner #1. Bean Chili with Walnuts and Chocolate served with Cornbread   
           This chili is perfect for chilly weather!  It's packed with veggies, has a blend of different legumes (Black, black eyed peas, cranberry, kidney), but the delicious twist is rich dark chocolate and crunchy walnuts!
          
      Dinner #2.  Dosas Filled with Sweet Potato & Cauliflower with Turkish Red Lentil Soup
                My Indian friends gave me a thumbs up on my dosa batter made from scratch and the fusion take on the traditional potato masala filling.  The parsley mint chutney and creamy avocado yogurt sauce added to the multiple flavors.

                  My garlic root veggie fries are a healthier alternative to the SF Giants Garlic Fries!

      Asian Pear Cake

      This was the first cake I made that got me started on my GF cupcake business! It is delicately spiced with cinnamon and has raisins, walnuts, and yummy slices of Asian pears.

       Dinner #1.   Spinach Ricotta Pie with Almond & Feta Stuffed Leeks

                    Pie is made with fresh homemade ricotta and crust is made with almond meal.

           


           

           

           

          Dinner #2.  Lemongrass Curry with Black Rice.  Served with Spring Rolls.

                     These spring rolls are like rolls of fresh raw salad: Napa cabbage, sprouted mung beans, beets, carrots, mint.  Paired with a ginger almond sauce...yum!

          Dinner #3.   Noodle Free Lasagna with Spinach Kale Soup
                     I was just told this is the best lasagna ever!  And there is no grain or dairy in this!  This lasagna is made completely with veggies and nuts!

          Dinner #1. Sweet Potato Ricotta Gnocchi with Brussels Sprouts in Brown Butter Sauce, Served with Braised Winter Greens with Chickpeas

          I love making gnocchi with my freshly made ricotta! Winter greens include kale and chard.





           


          Dinner #2. Leek and Broccoli Tart, Served with Yellow Beet Salad

          This is a paleo tart, made with an almond pie crust and topped with cashew "parmesan". Salad is served with lemon poppy seed dressing.

          Dinner #3. Black Eyed Pea Gumbo, Served with Wild Rice and Creamy Cauliflower Soup

          Super tasty gumbo made with a GF roux, gumbo file, and okra, topped with a homemade chili pepper sauce.

           Lemon Meringue Pie

          I've been told this is my best dessert... What amazes me about this pie is that traditionally made ones actually don't need gluten and sugar to taste great!!

          Dinner #1 Mung Bean Noodle & Tofu with Black Bean Sauce Stir-Fry, Served with Turnip Cake.

          This stir fry had so many ingredients!  Fresh bamboo shoots, mung bean sprouts, snow peas, carrots, broccoli, napa cabbage, shitake mushrooms, bok choy, and Hodo tofu topped a bed of mung bean noodles in a black bean sauce.

          Dinner #2 Kung Pao Sweet Potatoes, Served with Chinese Scallion Pancakes

          The Kung Pao is prepared with a homemade paleo version of hoisin sauce made with coconut amino acid instead of soy, and had almonds instead of peanuts.  I topped this with crispy lotus root.

          Dinner #3 Palak Paneer, Served with Veggie Stuffed Paratha

          Palak Paneer is creamed spinach and mustard greens, along with homemade cubes of soft cheese.  The paratha is paleo, made of almond flour, and stuffed with cauliflower and peas.

           

           

          Custard Tart

          To celebrate the Chinese New Year, I am made a healthier version of "don tot", which is the custard tart you will find at Chinese dim sum.  The crust was so flaky and you wouldn't expect it to be gluten free!

           

          Assorted Vegan Truffles

          Flavors included chocolate mint, ganache, chocolate rose, chocolate chili, hazelnut, and orange blossom with pistachio.

          Dinner #1 Butternut Squash Mac and Cheese, Served with Sauteed Kale and Roasted Beets

          A tasty twist on a traditional dish- the butternut squash is part of the creamy (and orange!) sauce, and adds a nice sweetness.




          Dinner #2 Egg Stuffed Zucchini Boats, Served with Cara Cara Orange Salad

          The boats are actually like mini quiches baked inside zucchini.  These are filled with veggies, walnuts, and fresh basil.  The salad is a bed of spinach and chicory, topped with slices of cars cars orange, avocado, and toasted pecans.

          Dinner #3 Caponata, Served with Fresh Herb Farinata

          Caponata is the Italian version of ratatouille:  A yummy mix of roasted eggplant, capers, and olives.  The farinata is chickpea flatbread, which I made with fresh thyme and sage.

          Dinner #1 Vegetable Empanada, Served with Sauteed Collard Greens.

          I made these baked pastry with my latest favorite gluten free dish:  PUFF PASTRY!!!  I filled these with shaved brussels sprouts, leek, oyster mushrooms, peas, and goat cheese.



          Dinner #2 Stuffed Kabocha Squash, Served with Cream of Broccoli and Cashew Soup

          This wonderful squash is stuffed with cauliflower rice, veggies, nut cheese, and almonds.  Cashew cream is added to the broccoli soup.

          Dinner #3 Spinach Dhal, Served with Minted Rice with Tomato and Sprouted Beans

          Dhal is an Indian lentil stew, and this one is made with fresh spinach.  The rice pilaf includes tomatoes, mint, pea shoots, and sprouted lentils, chickpeas, and adjukis.

          Key Lime Pie

           

          This pie is made with my GF graham cracker crust and a naturally sweetened condensed milk, both made from scratch.

          Katis are Indian wraps: These are made grain-free, filled with egg and veggies.  The spinach fritters are served with mint parsley chutney.

          It's the beginning of asparagus season! Quiche is made with a grain-free crust.

          Spanakopitas are spinach and feta pies, and this cabbage soup is flavored with fresh dill and thyme.



          Dinner #2 Moroccan Lentil Soup, Served with Moroccan Quinoa Salad
          Tasty lentil soup with cinnamon and paprika. The salad includes quinoa with raisins and cinnamon, alongside grilled veggies.

          Shakshuka is a super tasty dish of eggs slow cooked in cumin tomato sauce, along with other veggies.

          Pecan Pie

          Even though this totally decadent pie is a great holiday pie (and I'm not making this for any particular holiday on March 14th!), it's one of my favorites. I started making this pecan pie over 20 years ago, without sugar. Recently, I saw a relative I hadn't seen in several years, and she asked me to make this pie again!

          Grain free pizza crust covered with walnut pesto sauce and topped with roasted veggies. Avocado replaces the mayo for this egg salad.

          Freshly made Indian crepe batter, filled with sweet potato, cauliflower, and kale.  It's a twist on the potato masala that's traditionally served with dosas.

           A super tasty version of falafels that is light and flavorful:  These are baked, made with pistachios, mint, and parsley, and wrapped in leaves.  They are then topped with a cashew cream, lime yogurt, tomato chutney, raisins, and pistachios.  The pretty red hummus is accompanied by a GF flatbread.
